Maestro // 6.5" Filetting Knife
The narrow, extra-thin and perfectly balanced 6.5” blade of the Maestro filetting knife is designed to flex for control and maximum yield while filleting fish.
Maestro knives are crafted in Thiers, France by 13th generation knife maker Tarrerias-Bonjean. Using a traditional forge, the full tang blade is precision-forged from one single piece of steel for additional balance, and strength.
The blade is made of proprietary Nitrox® steel: an ultra-user- friendly and low-maintenance alloy. It was designed to make premium kitchen knives that remain perfectly suited for everyday use. The steel is tempered to the sweet spot of 56HRC: it’s hard enough to offer excellent resistance against edge wear and deformation, and soft enough to allow for easy re-sharpening. It’s the perfect balance between the two and it also preserves the blade’s flexibility and forgiveness for outstanding toughness against chipping.
Nitrox®’s impressive wear resistance comes from both the hardness level (56 HRC) and the high carbon content (0.35%), which guarantees a durable, razor-sharp edge meal after meal. Finally, with a Chromium content of 16%, it offers the one of the best resistances to corrosion available in kitchen cutlery.
The ergonomic handle is made of Polyoxymethylene (POM) which provides exceptional resistance against heat, impact, and detergents. It is triple-riveted to the full tang for extreme durability.
